- Calentar un buen chorro de aceite de oliva virgen extra en un wok o sartén muy honda mientras pelas y troceas la cebolla. Luego la añades en juliana (a tiras) y dejas que se vaya sofriendo mientras lavas y cortas los pimientos en tiras

- Añade los pimientos y luego los 4 filetes de pechuga de pollo cortados a tiras (yo lo hice con tijeras), dando varias vueltas a cada rato para que se vaya sofriendo de manera uniforme

- Agrega la bandeja de champiñones laminados y continúa removiendo para que sofría todo por igual


- Cuando esté, pon los fideos chinos escurridos y los 100 ml de salsa de soja, dando vueltas para que se mezcle bien todo a fuego bajo

- Sirve cada ración y, de forma opcional, añade en cada una un puñado de almendras crudas peladas o tostadas sin sal
