  1. Sofrito: Troceamos la cebolla, el ajo y lo sofreímos junto con la hoja de laurel, cuando esta doradito todo añadimos el pimiento verde y sofreímos hasta que esté pochado, por último añadimos el tomate rallado o triturado y salpimentamos. Añadimos el brandy y dejamos evaporar. Reservamos

Fumet. en una cacerola añadimos un poquito de aove donde sofreiremos las peladuras de los carabineros, una vez sofrito añadiremos agua (siempre pensando en que hay que duplicar el volumen del arroz con el caldo). Cocerá durante 10 minutos, reservamos y trituramos las peladuras con la batidora, Colamos y reservamos
  3. Añadimos al sofrito los calamares limpios y troceados. Sofreímos bien. Y después los trozos de pollo. Añadimos el arroz que sofreiremos bien.
  4. Después añadiremos 3/4 del caldo y pondremos el sobre de paellero, las judías verdes y las almejas y a cocer durante 20-25 minutos probando punto de arroz y de sal y el último cuarto de caldo cuando el arroz lo haya consumido si le falta cocción.
  5. Cuando el arroz esté en su punto ponemos los carabineros encima, dejamos sobre el fuego ya apagado y tapamos bien para que repose 5 minutos y se haga en esa "sauna el carabinero y esté en su punto sin pasarse.
  6. Ya sólo nos queda disfrutarlo en la mesa! Que lo disfrutéis!!!
