  4. Cuando las verduras cojan color, añadimos el azafrán, ajo y perejil machacado. Sofreír un poco y añadir un vaso de coñac, flambear y dejar que reduzca 5 minutos.
  5. Rectifica de sal y cocina 14 minutos a fuego vivo y apagar. Tapar con un trapo de cocina y dejar 5 minutos reposando, y comer!!
  6. Añadir el arroz, si es bomba es el mejor para las paellas, dejar que se refría con todos los ingredientes. La cantidad que yo pongo es una taza de café con leche para dos personas y doble cantidad del caldo que teníamos reservado.
