  3. Hacerle el vacío en una bolsa y hervirlo durante 90 minutos a 65 grados. En la olla suelo poner una cazuela de barro para que el pollo no esté en contacto directo con el fondo. Serviría también una rejilla o algo por el estilo.
  4. Si no tienes máquina de envasar al vacío no te preocupes, también se puede hacer el vacío con bolsas con cierre zip. Solo tienes que meter el pollo en la bolsa y dejarla casi cerrada. Sumerges la bolsa en una fuente con agua justo hasta el borde, de esta forma la presión del agua expulsará el aire y entonces la cierras por completo.
  5. Dejar enfriar, lonchear y a la nevera!
